It is the typical saucepan for closed casserole or risotto. Due to the specific cooking process in which heat is distributed directly to the food by the whole surface of the pan, it is essential that it is made of a metal with excellent heat conductivity, so that heat may be distributed from the bottom fo the casserole to the sides, right up the the neck in the shortest possible time.
This casserole is made using a special laminate of thick copper with a very thin sheet of stainless steel allowing the heat transfer advantages of copper with the hygiene and easy cleaning of stainless steel. the classic two-ply of thick copper coating with 18/10 stainless steel lining
